Beef stew the cowboy chow, Texas style

Whether you're in Texas for only a few days or spend a few weeks. Soon you will realize that Texas is one of the best states in the United States to spend your vacation. The state where its about: meat, beer and coffee!

But Texas is much more: beautiful scenery, incredibly nice people, And if you treat them wit respect they will share te most wonderful stories about the time when cowboys road across the dry plains. 

This recipe comes from John Crowley, not the film director he told me with a generous smile, which showed me all of his three teeth he had. John traveled from the age of fifteen to sixty-eight as an (assistant) cook with hundreds of cowboys and visited every area of Texas.

This recipe he calls his "cowboy chow" a delicious dish on a winter day. It requires some preparation but after that you also have a super dish.

t takes about 3,5 hours.

  • 6 slices of bacon cut in halves
  • 2 pounds of lean beef, cut in bitesize chunks 
  • 6 tablespoons of flour
  • 6 large onions
  • 2 cloves of garlic chopped
  • 1 can of tomato sauce
  • 1 can of beef broth
  • 1 cup of red wine (or 2 if you want one to go;)
  • 6 carrots sliced
  • 6 potatoes
  • 2 stalks of celery chopped
  • 1 green pepper
  • 1 red pepper
  • 10 mushrooms
  • 2 bay leaves 
  • 1 teaspoon of chili powder
  • 1 teaspoon of curcuma powder




Take a big pot (in Texas it is hung over the fire). Bake first the garlic, onions, peppers, champions and bacon (note onions must be glassy not brown). Get it all out after a few minutes. Put the tablespoons of flour in a bag and add the beef. Shut this well, so that all the pieces are covered with flour. Use the bacon fat to bake the beef around brown. Now add all the dry ingredients. Let this be done for a few minutes. Now add all the wet ingredients and extinguish it. When it is boiling, turn the gas back to low and let it simmer for 2 hours. Then add the onions, garlic, bacon, potatoes, winterpenes, champions, celery and peppers and let it simmer for 1.5 hours on low heat and simmer.


And now take your grub and attack but ........... i bet you, people who you never see will pay you a visit and come to eat with you!
